Carrot Muffins

Here I will start posting on nutritional food that all mommy and their babies need to be healthy. The first one that I have here is the Carrot muffins.

Carrot muffins are a great way to get vitamin A:

2 cups all-purpose flour
1 tablespoon baking powder
3/4 cup skim milk
1 egg, beaten
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon finely grated orange peel
1 cup carrots, grated
1/2 cup raisins
1/2 cup walnuts or pecans, chopped

Sift flour and baking powder into a bowl. In a second bowl, combine milk, beaten egg, sugar, oil and orange peel. Then gently stir in grated carrots, raisins and nuts. Add the carrot mixture all at once to the dry ingredients, mixing just until the flour mixture is moistened. Spray muffin pan with Pam or another nonstick spray and fill to three quarters full. Bake at 425° for 20 minutes, till lightly browned. Makes 12 healthy and delicious muffins.

Try it. I hope I can find more recipe for you.. hehehe
